
Ingredients
- 15ml Midori
- 10ml HKB (strong-aroma baijiu)
- .35g Sea salt
- .1g Malic acid
- 150ml Cucumber water
- 1Mix ingredients together.
- 2Pour onto a clear rod of ice in a 300ml graduated grey Bormioli Rocco glass.
- 3Ideally paired with a single xiao long bao (soup dumpling) served on a smoked glass plate.
One of a series of drinks named for the five Chinese elements—water, wood, fire, wood and metal—this is a light and refreshing drink that evokes ingredients with high water content, such as cucumber and melon. The baijiu grounds the other ingredients, adds a level of complexity, and provides a bridge to the xiao long bao.
