Ingredients
  • 15ml Midori
  • 10ml HKB (strong-aroma baijiu)
  • .35g Sea salt
  • .1g Malic acid
  • 150ml Cucumber water
  • 1
    Mix ingredients together.
  • 2
Pour onto a clear rod of ice in a 300ml graduated grey Bormioli Rocco glass.
  • 3
Ideally paired with a single xiao long bao (soup dumpling) served on a smoked glass plate.

One of a series of drinks named for the five Chinese elements—water, wood, fire, wood and metal—this is a light and refreshing drink that evokes ingredients with high water content, such as cucumber and melon. The baijiu grounds the other ingredients, adds a level of complexity, and provides a bridge to the xiao long bao.
