  • 50ml Erguotou (light-aroma baijiu)
  • ½ Fresh passion fruit
  • 20ml Fresh lemon juice
  • 15ml Cherry brandy
  • 10ml Simple syrup (adjust to the acidity of passion fruit)

    Shake all ingredients hard over ice.

Named for Huangdi, the legendary prehistoric Chinese philosopher king. Paul Mathew invented this cocktail on the spot in a Beijing bar when challenged by an “overserved” Bai-ologist.
