  • 50ml Ming River (strong-aroma baijiu)
  • 15ml Raspberry puré
  • 15ml Lichi juice
  • 20ml Simple syrup
  • 30ml Lemon juice
  • 20ml Egg white
  • 1
    Dry shake.
  • 2
    Shake with ice.
  • 3
    Double strain into cocktail glass.
  • 4
    Garnish with sliced hawthorn.

We first met the Made in China team at Bar Convent Berlin 2018, and were excited to learn that they’re leading the baijiu charge in Russia. There’s so much creativity being expended here on strong-aroma baijiu and fruit pairings. Can’t wait to see what they come up with next.

Derek Sandhaus is the educational director of Ming River Baijiu. He is the author of several books about China, including Baijiu: The Essential Guide to Chinese Spirits and a forthcoming book on Chinese drinking culture, Drunk in China (Potomac, Fall 2019). He currently lives with his wife and dog in Washington, D.C.
